Origin of Sour Sweets

Sour sweets have been around for as long as we can remember. Sour candies didn't have a great reputation when they started to be manufactured back in the 19th century. People were afraid of the chemicals involved because manufacturers had to use acidic ingredients such as vinegar. Vinegar was added to convert sugar into glucose and to make that distinctive sweet and tart combo. By the 1950s, the game changed as manufacturers began to use Halloween in the USA as a platform for advertising sour candies. They ran themed promotions that created a mental link between sour candy and the spooky festival. In 1954, Ferrara Pan Candy Company created and launched Atomic Sour Fireballs based around the time the US Army detonated the first hydrogen bomb. The candy left the mouth numb, being filled with capsaicin and cinnamaldehyde, and it captured the public imagination. By the end of the 1970s, sour candy was a hot-selling category of sweets in its own right, driven by hugely popular sour sweets such as Warheads in the USA, which were made in 1993 and based on a very sour candy found in Taiwan. The extremely sour taste was made from malic and citric acid and it created a 'warhead' in the mouth.
